Pimiento rojo o verde (o ambos)

Buen provecho!

Besitos

                                                                 -------------------------

Good morning everybody! I'm sorry for have been absent for more than one month. I've been quite busy with work. Today in theory I worked, although we are in bank holiday. But I am immersed in a new store opening, I will tell you and will take pictures of how it has been the shop!

Today bring a recipe,  I don't know if you know but I love cooking, when my flatmate Sarita (great Cook and future partner of our future restaurant in London :)) taught me the recipe for the Red Thai Curry could not resist to do it and the truth is that I can not stop cooking it. It is delicious, it accepts all variety of vegetables, meat like tenderloin strips, chopped pork or chicken, fish like squid, mussels, prawns. All that fat is coconut milk, but it is soooo good...

There is also the paste of green curry that is also very good and you can prepare the same recipe but with the other curry.

Ingredients for Noodles with prawns and Red curry (2 persons)

A package of Egg Noodles or rice
Red or green pepper (or both)
1 courgette
Prawns uncooked (also can add you squid, mussels...)
1 red onion
Oyster mushrooms or mushroom
1  carrot
1 Leek (optional)
spring onion and coriander
Red curry paste
A can of coconut milk
Fish Sauce
Palm Sugar (if you don't find it use a small teaspoon  brown sugar)
Salt
Sunflower oil

Preparation:

Preheat 1 tablespoon of sunflower oil in a Wok pan. While we are cutting into strips red onion and Leek.
When the oil is hot, pour all in the pan and spin for a couple of minutes,  the interesting thing about this dish is that vegetables must be crisp.
Then pour the carrot and mushrooms, also cast the prawns until they pick up color.

We take the curry paste and threw like 3 teaspoons to the pan, mix with everything in the wok for 2 minutes and pour the pepper cut into strips and the whole can of coconut milk.

Then the courgette into chunks, a splash of fish sauce and Palm sugar teaspoon.

It's also good to throw a mixture called Thai mix that brings cilantro, lemon grass and chilli all together, but if you can't find it. Chopped coriander and a chilkli and throw a small amount chopped too, although from my point of view the pasta is already hot so  I don't  add more chilli, but if you like it spicy go ahead!.

Leave it cooking for 5 minutes, take the noodles (the ones that I usually buy are already cooked, so I just have to throw them directly into the pan, and soak all the flavors).

Serve in bowls and garnish with chopped coriander and spring onions and ready!

To accompany be served with prawn crackers with sweet chilli sauce :)

Hope you liked my recipe! :)

Bon Appetit!

Kisses
